At first glance, this casserole captivates. Naturally, it contains eggs, but its real charm lies in the luxurious blend of spinach, Parmesan, and mascarpone cheese. This mixture is layered between halved English muffins in the baking dish, creating a stunning effect when baked, as the muffin tops rise and turn a rich golden-brown.

This allows each “sandwich” to be served directly from the dish—just remember, this is a dish best enjoyed with utensils, so set out some forks and knives.

What’s truly fantastic about this recipe is how it improves with a little time.
