I encouraged her to take charge, letting her place the chicken and salsa into the cooker and mix everything by hand. Hours later, the chicken was perfectly tender. I moved it to a cutting board to cool slightly before letting her shred it with forks. She then squeezed lime over the chicken, mixed it up, and after taste-testing, approved it as “ready.” This simple taco recipe has become a staple for us.
Crafting 4-Ingredient Slow Cooker Chicken Tacos
To whip up 6 to 8 servings, gather the following ingredients:
- 2 pounds of mixed boneless, skinless chicken thighs and/or breasts
- 1 cup of your favorite tomato salsa
- 1 lime
- Salt and freshly ground black pepper, to taste
- Warmed tortillas for serving
- Optional toppings: shredded lettuce, diced tomatoes, sour cream, sliced avocado or guacamole, hot sauce, and more salsa
Place the chicken in a 5 or 6-quart slow cooker. Smother the chicken with salsa, ensuring it’s well coated, then settle it into an even layer at the bottom of the insert. Cover and cook until the chicken is easily shredded with forks, about 3 hours on high or 6 hours on low.
Once slightly cooled, move the chicken to a cutting board. Zest and juice the lime, then shred the chicken into manageable pieces. Mix in a large bowl with lime zest and juice, season with salt and pepper, and toss well.
Serve the shredded chicken in warm tortillas with any additional toppings you like.
Allow the chicken to cool to room temperature before storing in a covered container in the fridge, where it will keep for up to 5 days. For freezing, place in a freezer bag, expel excess air, and seal. Label and date for use within 3 months. To reheat, place in a pan with a bit of water or salsa, cover, and warm over medium-low heat, stirring frequently.
