Ingredients
- 2 pounds mixed boneless, skinless chicken thighs and/or breasts
- 1 cup prepared tomato salsa
- 1 lime
- Salt and freshly ground black pepper, to taste
- Warmed tortillas, for serving
- Optional toppings: shredded lettuce, diced tomatoes, sour cream, sliced avocado or guacamole, hot sauce, and/or more salsa
Method
- Add ingredients to slow cooker: Place the chicken in the slow cooker and smother with salsa. Ensure the chicken is evenly spread at the bottom.
- Cook: Secure the lid and cook until the chicken is tender and easily shreds with a fork, about 3 hours on high or 6 hours on low.
- Shred the chicken: Move the chicken to a cutting board to cool. Meanwhile, zest and juice the lime. Shred the chicken using two forks, then toss with lime zest and juice, seasoning with salt and pepper to taste.
- Serve: Offer the chicken with warm tortillas and any desired toppings. To store, cool the chicken to room temperature, then refrigerate in a covered container for up to 5 days or freeze for up to 3 months. Reheat in a saucepan with a bit of water or salsa.
