Ingredients

  • 4 medium ears fresh sweet corn

  • 4 green onions, thinly sliced

  • 2 large eggs, beaten

  • 1 cup (125g) all-purpose flour

  • 1 teaspoon salt

  • 1 teaspoon baking powder

  • 1/2 teaspoon freshly ground black pepper

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon paprika

  • 1/4 cup neutral oil, plus more as needed

  • Flaky salt, for serving, optional

Method

  1. Prepare the corn:

    Slice off the corn kernels from the cobs and put them into a large mixing bowl. (You should end up with about 2 1/2 cups of corn kernels.) Using the back of your knife, scrape the cobs over the bowl to extract any remaining corn milk and pulp.

  2. Create the fritter batter:

    Mix in the green onions, eggs, flour, salt, baking powder, black pepper, garlic powder, and paprika until it forms a thick, uniform batter.
