Meatloaf ranks high on my list of comfort foods, but I’m quite particular about its preparation. I crave a meatloaf that’s juicy and full of flavor, not rubbery or overly mixed, with just the right amount of onion flavor.
A common method among many cooks is to mix in a sweet onion, either diced or pureed. But I’ve found a simple alternative that you probably have in your kitchen already: dried minced onions.
This substitution initially happened because I was feeling particularly lazy one day. I had a pound of ground beef ready to go and a craving for meatloaf, but chopping an onion felt like too much work. I spotted a jar of dried minced onions in my spice cabinet and impulsively decided to throw some into the mix.

The Advantages of Dried Minced Onions in Meatloaf
The meatloaf I ended up with was one of the best I’ve ever made. The only change I made from my usual recipe—which includes ground beef, bread crumbs, egg, and spices—was the addition of dried minced onions. Covered in a rich, ketchup-based sauce, the moisture from the beef and other ingredients perfectly rehydrated the dried onions without making the mixture too wet. The outcome was a deliciously seasoned and well-textured meatloaf.
Dried onions pack a more potent flavor, which means the onion taste is more distinct in the meatloaf. It’s similar to the old trick of adding a packet of Lipton Onion Recipe Soup and Dip Mix for flavoring, but without the excess salt. With dried onions, a tablespoon or two is all it takes to flavor the whole dish.

The switch to dried onions also improved the texture significantly. One of my complaints about traditional meatloaf is the difficulty in mincing onions finely enough to blend smoothly into the mix. That problem doesn’t occur with dried minced onions, which integrate so well that you don’t get chunks of undercooked onions.
Moreover, this kitchen hack is budget-friendly. A jar of dried minced onions typically costs $3 or less at most grocery stores, whether you opt for a generic or brand-name product. Plus, it lasts a long time in your pantry, ready for whenever you feel like making meatloaf again.
