After receiving a tip from a reader named Bill Hunsinger in response to an earlier article about cucumber sandwiches, I was intrigued. “For the best cucumber sandwich you’ll ever taste, try peanut butter and cucumber,” he suggested. He picked up this tip from his father, who may have learned it during the 1930s Depression or while serving in the Army Air Corp during World War II.
Since around 2013, I’ve been passionately enjoying peanut butter and cucumber sandwiches each summer and have met few others who share this preference. It was fascinating to exchange ideas with Bill about his version of the sandwich.

No matter how you choose to enjoy this pairing, the combination of peanut butter (particularly the crunchy type, which is my favorite) and cucumber offers a distinctive taste that might just make you wonder why you haven’t tried it sooner. I’ve been making this recipe for 63 years, and it’s still as delicious to me now as it was back in 1961,” Bill explained.

I only prepare it this way with large, ripe, homegrown tomatoes, and it’s incredibly messy (I apply generous amounts of crunchy natural peanut butter to both bread slices). The sandwich must be eaten immediately, preferably over the sink, with plenty of paper towels at the ready. I usually toast the bread slightly to better support the weight of the juicy vegetables.
