My Approach to Jamie Oliver’s Classic Tomato Spaghetti

Preparing this dish is straightforward: slice some garlic and a red pepper, chop the basil stems, and sauté everything in olive oil in a skillet. Once the garlic begins to brown, stir in the canned tomatoes and fresh basil leaves, cook for a minute on high heat, then mix in the cooked spaghetti. A sprinkle of Parmesan cheese finishes it off perfectly!

I generally stick to the recipe as written, but it’s good to note a few things. Although the recipe estimates a 30-minute prep time, you can multitask by cooking the pasta simultaneously with the sauce, cutting the total time to about 15 minutes.

It’s also noted to serve four, which it does if you’re okay with a modest amount of tomatoes. I prefer to use half the spaghetti but keep all other ingredients the same, yielding a richer, tomato-heavy meal for two.

Turning this into a meaty dish is also quite simple—just add some cooked ground beef to the tomatoes. Another handy tip: if fresh red chilies are unavailable, dried ones are a great substitute.
