My admiration for Stanley Tucci stretches back years, and his recent adventures into the culinary scene via social media have only deepened my appreciation. More recently, Tucci became an internet sensation for his unique take on the Negroni cocktail, and he has hosted two seasons of the food and travel series “Searching for Italy” on CNN. However, it’s his delightful home cooking videos that really catch my attention. A particular video from last spring showed him preparing a tantalizing scramble of eggs, spinach, and mushrooms, which he topped with freshly grated Parmesan, all while flashing a mischievous smile.
Tucci presented the dish already plated and suggested serving it on bread as a sandwich. The simplicity of the recipe gave me confidence to try making it myself at home.
Preparing Stanley Tucci’s Signature Scrambled Eggs
Being a fan of Joe’s Special, a childhood dish that combines eggs, spinach, and mushrooms, I was excited to try Tucci’s simpler version. I began by heating a mix of olive oil and butter in a skillet, to which I added sliced cremini mushrooms and single stems of beech mushrooms.
After browning the mushrooms, I set them aside and added a little more olive oil and butter to the pan to wilt a generous amount of baby spinach. Setting the spinach aside, I used yet more oil and butter to gently scramble some eggs, seasoning them lightly with salt as I cooked.
Once the eggs were softly set, I mixed in the mushrooms and spinach, combining them carefully. I served the scramble over a toasted slice of focaccia, topped with a generous sprinkle of fresh Parmesan and a dash of black pepper.
