  • 3/4 cup drained and chopped sun-dried tomatoes with herbs

  • 3 tablespoons tomato paste

  • 8 cups chicken broth

  • 2 teaspoons kosher salt

  • 8 ounces small pasta shells (about 2 cups)

  • 1 (5ounce) package baby spinach, coarsely chopped

  • 2 cups shredded cooked chicken (about 8 ounces)

  • 1 (8ounce) package cream cheese, cubed and softened

  • 1/2 cup finely shredded Parmesan cheese, plus more for garnish

  • 1/4 cup chopped fresh basil, plus more for garnish, optional

Method

  1. Prepare the tomato base:

    In a large Dutch oven, heat the oil from the sun-dried tomatoes over medium heat until it shimmers, usually about 3 minutes. Add the minced garlic and sauté until it’s aromatic, around 1 minute.

    Mix in the sun-dried tomatoes and tomato paste, stirring continuously until the paste darkens slightly, about 2 minutes.

  2. Enhance the broth:
