This French-inspired pastry is less fussy than a traditional pie and does a fantastic job of highlighting the natural beauty and taste of the fruit.
Crafting a galette is as simple as rolling out a circle of pie dough, placing some lightly sweetened fruit in the middle, and folding the edges over to create a pleated crust. There’s no need for intricate crimping or weaving here!
The open design of a galette allows the fruit’s moisture to evaporate easily in the oven, resulting in a filling that’s tender and slightly caramelized. A bit of cornstarch mixed with the fruit ensures any excess juice thickens up, keeping the tart firm and not mushy, while an egg wash and a sprinkle of turbinado sugar give the crust a shiny, crystallized finish.
Choosing the Best Pears
Although you can fill a galette with any type of seasonal fruit you like (think peaches, plums, apricots, and cherries), for this autumn-themed dessert, I’ve chosen juicy, sweet pears and vibrant, tart cranberries. This combination not only tastes wonderful but also looks festive and inviting, perfect for holiday gatherings.
You can use any type of pear for this recipe (Bosc and Anjou are particularly good choices), but it’s crucial that they aren’t too ripe. Overly ripe pears will release a lot of juice, causing the slices to become too soft and potentially making the galette soggy.
