Josh Alsberg, who co-owns Rubinette Produce Market in Portland, OR, claims that the secret lies in the lemon’s weight and density. Aim to pick a lemon that feels heavier than its peers, a sign it’s loaded with juice. “For any citrus fruit, if you compare two of the same size and one is notably heavier, that’s your juicier choice,” he explains.
You might need to test a few lemons to find the perfect one, but it’s an effort well spent. You can also gently squeeze the lemon to check. You’re looking for one that’s firm but not too hard. A rock-hard lemon probably won’t yield much juice and won’t improve in ripeness if left in your kitchen.
According to Alsberg, lemons mature ideally while still on the tree. Generally, the longer they remain on the tree, the better they taste. However, if a lemon feels extremely soft, it might be overripe and could spoil before you get a chance to use it. Always check for mold if you’re unsure.

After you’ve selected your juicy lemons, Alsberg suggests refrigerating them to extend their freshness. If you choose to display them in a fruit bowl on your countertop for their aesthetic appeal and refreshing scent, make sure to use them quickly—within a few days—as they will degrade faster.
Maximizing Juice Extraction from Lemons
There are numerous tips for squeezing the most juice out of your lemons. One effective method is to heat them up slightly in the microwave. Heat a lemon on high for about 30 seconds or until it feels warm to the touch. Let it cool enough to handle, then cut and squeeze it for maximum juice.
For those who want to take their juicing up a notch, Alsberg recommends investing in a quality juicer. Electric juicers are most efficient, but even a manual hand-press can yield a significant amount of juice.
