My Mom’s Simple Strawberry Dessert Tastes Like Summer In a Bowl

Summer strawberries have a charm of their own. Growing up, my mother would always make sure to swing by our neighborhood farm stand to grab a couple of pints during the early weeks of summer. The irresistible aroma of those bright red strawberries would tempt us to sneak a few as we drove back home. Later, she would transform the rest into the evening’s dessert.

Those strawberries were already delightful by themselves, but they reached a whole new level of deliciousness when my mom prepared our most-loved summer treat. She would slice the strawberries, sprinkle them with sugar and a splash of vanilla, and let them sit out on the kitchen counter as we finished our dinner.

Once we were done with the meal and the dishes were washed, she would serve the strawberries, now tender and swimming in their own sweet syrup. She often paired the berries with a dollop of whipped cream or a scoop of vanilla ice cream, occasionally adding crumbled pieces of sugary ice cream cones to the mix. It was like tasting the essence of summer in every bite!

Whenever I visit home, my mom still whips up this dessert, sometimes accompanying it with a freshly baked angel food cake from a local bakery. And when strawberry season hits here in Chicago, I find myself recreating this treat for my own family.

Over the years, I’ve put my own spin on it, but I largely stick to my mother’s straightforward method. It’s become a family favorite, a perfect conclusion to any summer meal.

Serving the Classic Strawberry Dessert

My mom would often ladle the strawberries over store-bought shortcakes, but my personal favorite was when she served them atop a generous scoop of vanilla ice cream. I’d pour the berries and all their syrupy goodness over the ice cream, tilting my bowl to catch every last drop. You can also top them with whipped cream and sprinkles (a hit with my daughter) or use them as a topping for plain Greek yogurt. No matter how it’s served, it’s always a hit.

Crafting My Mom’s Signature Strawberry Dessert

To whip up four servings, here’s what you’ll need:

  • 1 pint strawberries (approximately 12 ounces)
  • 1 tablespoon granulated sugar, or adjust according to taste
  • 1 teaspoon vanilla extract
  • A pinch of flaky sea salt for garnish
  • Optional whipped cream or vanilla ice cream for serving

First, hull and slice the strawberries into quarters and place them in a large bowl. Sprinkle with sugar and vanilla extract and let them sit at room temperature until they release their juices, which takes at least 20 minutes but can be up to 2 hours. Adjust the sugar amount based on the natural sweetness of the berries.

Give the strawberries another toss before serving. Dish them into bowls, sprinkle with a pinch of salt, and serve as is or topped with whipped cream or ice cream.

Any leftovers should be stored in an airtight container in the fridge and are best used within a day.
