For simplicity, I use a ranch seasoning mix packet to marinate both the chicken and the potatoes. I prefer baby Yukon gold potatoes for their small size and ease of preparation—just wash, pat dry, and they’re ready to use. I also toss a whole head of garlic into the pan, drizzling it with oil before roasting, then squeezing out the soft, caramelized cloves to spread on the dish before serving.
