The Caesar salad is a versatile dish that varies widely depending on its creator or point of purchase. Yet, the one constant it must boast is its iconic creamy dressing, which itself can come in different variations.

Esteemed chef Julia Child was known to feature Caesar salad among her dishes, albeit with a few unique twists that deviated from the traditional recipe. The culinary mastermind’s version omitted an ingredient often deemed essential by purists.

What Sets Julia Child’s Caesar Salad Apart?

Cooking for me is about taking chances, mostly because I’m the one eating it. Although I consider my family’s tastes, I’m the chef, so I need to enjoy it too. That’s why my dinner table often features pizzas with unique toppings and tacos without the usual ground beef, instead of the standard baked chicken or meatloaf.

While I never met Julia personally, I perceive her as someone who embraced risks. Despite her reverence for tradition, The French Chef wasn’t afraid to stray from it. Take, for instance, her version of Caesar salad, which surprisingly does not include anchovies, typically a staple in the dressing.

Crafting Julia Child’s Caesar Salad

Forgoing anchovies entirely, Julia took inspiration from Caesar Cardini himself, the salad’s originator. Her fascination with the dish began during a childhood visit to Cardini’s restaurant in Mexico, where she learned to keep the leaves whole and dress each one separately, ensuring a thorough and flavorful coating.

Her method starts with fresh inner leaves of romaine lettuce, left whole and delicately tossed first with olive oil, followed by a sprinkle of salt and pepper. Then, a dash of fresh lemon juice and Worcestershire sauce are added. After a taste test, a coddled egg with a runny yolk is introduced, and the leaves are tossed again until well-coated.

The finishing touches include freshly grated Parmesan and homemade garlic croutons. After another brief mixing, the salad is ready to serve. Originally designed to be eaten with the hands, this dish offers a playful yet potentially messy dining experience. If you’re less inclined towards mess, feel free to use utensils.

To Include Anchovies or Not?

Personally, the presence of anchovies in a Caesar salad doesn’t much matter to me; I enjoy the dish either way. At home, I often skip them since they’re not typically stocked in my pantry and my daughter isn’t a fan. When available, however, I use them for that extra hint of saltiness and the subtle umami flavor they bring to the ensemble.

As I mentioned, I’m open to experimentation, so I often substitute traditional ingredients to create my own versions. While I might not dress each leaf individually like Julia or Cardini, I’m definitely not shy about getting hands-on with my food.
