The challenge of cooking for a group of famished firefighters is intriguing, especially when they whip up dishes using whatever is on hand, including canned and boxed ingredients.
I’ve heard tales of their hearty chili pots and inventive casseroles featuring ingredients like sliced hotdogs, cream of broccoli soup, shredded cheese, and tater tots. Recently, my brother-in-law shared a special cornbread recipe from his firehouse that uses both boxed corn muffin mix and cake mix. After trying it myself, I was thoroughly impressed.
Creating Firehouse Cornbread
To prepare Firehouse 4 Cornbread, gather one 8.5-ounce box of Jiffy corn muffin mix and one 13.25-ounce box of yellow cake mix, in addition to the ingredients listed on the packages such as eggs, milk, water, and oil.
Start by placing a large (11- or 12-inch) cast iron skillet in the center of your oven and preheat to 375°F. Meanwhile, mix the dry ingredients in a large bowl and blend the wet ingredients in another. Combine them until the batter is uniform.
Once the oven is preheated, carefully remove the skillet and add one or two tablespoons of butter, allowing it to melt and coat the surface. Pour the batter into the skillet and bake until the top is golden and a toothpick comes out clean from the center, about 25 to 30 minutes.
Serving Firehouse Cornbread
According to my brother-in-law, popular toppings at the firehouse include maple syrup, butter, and honey. Even though the cornbread is quite cake-like and leans towards the dessert category, it’s frequently enjoyed as a side with chili and grilled dishes.
