How to Whip Up My 5-Minute Date Vinaigrette
For about 3/4 cup of vinaigrette, enough for four to six servings, you’ll need:
– 2 1/2 ounces of pitted Medjool dates (approximately six), roughly chopped
– 1/4 cup of water, plus more if needed
– 2 tablespoons of apple cider vinegar, with additional to taste
– 1 teaspoon of Dijon mustard
– 1/2 teaspoon of kosher salt, more to taste
– 1/2 teaspoon of freshly ground black pepper, more to taste
– 1/4 cup of extra-virgin olive oil
Combine the dates, water, vinegar, mustard, salt, and pepper in a blender. If using an immersion blender, place these ingredients in a narrow container. Blend on high until smooth, about one minute. Add the olive oil and blend on medium till it’s emulsified, roughly 30 seconds. Adjust the thickness by adding water, a half tablespoon at a time, until it reaches your preferred consistency. Blend for about 10 seconds after each addition.
Taste and adjust the seasoning with additional vinegar, salt, and pepper if needed. The vinaigrette can be used right away or stored in the fridge in an airtight container for up to a week. Make sure to stir or shake it well before use.

While my recipe sticks with classic vinaigrette elements, emphasizing the delightful combination of sweet dates and tangy vinegar, there’s plenty of scope to tailor it to your taste or available ingredients. Here are some suggestions:
– **Experiment with different acids:** While apple cider vinegar is my go-to, balsamic or sherry vinegar can elevate the dressing for special occasions. Lemon juice, and white or red wine vinegar are also great alternatives.
– **Try different mustards:** I prefer the subtle flavor of Dijon mustard, but mild German-style mustards can also work well, albeit with a sharper taste. In a pinch, even plain yellow mustard is an option.
– **Add extra flavors:** If you’re looking for more complexity, consider adding a small clove of garlic, a pinch of dried oregano, fresh herbs like basil, mint, or parsley, or a touch of heat with chili flakes. Minced shallot or finely sliced scallions can be stirred in after blending for an extra layer of flavor.
Options If You Don’t Have a Blender
A blender is ideal for achieving a smooth, well-emulsified vinaigrette quickly. However, if you don’t have one, you can still make this dressing by hand. Mince the dates finely, then mash them into a paste using your knife against the cutting board. Transfer this paste to a large bowl, add the other ingredients, and whisk until well combined and thickened. Alternatively, you can shake the ingredients in a jar with a tight-fitting lid. Though not as smooth, the vinaigrette will still be delicious.
