Freezing ingredients and meals is a key component of my weekly meal prep. I often use frozen items like dumplings, tater tots, vegetables, and pesto to whip up tasty dinners quickly during our hectic week.
However, when it comes to pre-made frozen meals, I’ve struggled to find options that meet all my family’s needs. We need meals that are vegetarian, protein-rich, large enough for my family of four, and delicious. I’m excited to share that I’ve discovered a frozen meal that ticks all these boxes: Amy’s Family Size Roasted Poblano Enchiladas, priced between $13.84 and $16.99.
My Love for Amy’s Family Size Roasted Poblano Enchiladas
The most important factor is the taste—if my husband and children aren’t fans, then nothing else matters. I can honestly say this is the first frozen meal that has been unanimously enjoyed by everyone at our table, and this success has been repeated every time we’ve had it for dinner.
Even if your children are as unpredictable as mine when it comes to food preferences, you can be confident that these enchiladas will be a hit. We’ve enjoyed them on numerous occasions and they continue to receive rave reviews.
On nights when we have Amy’s enchiladas, I am always impressed by their freshness. The ingredients list reads like something I could have picked up from my own pantry, featuring organic corn tortillas, tofu, vegetables, cheese, and more. My absolute favorite aspect is the creamy poblano sauce, which is rich with the flavor of fire-roasted poblanos.
Not only are these enchiladas delicious, but they’re also satisfying and nutritious. They contain more protein than many other vegetarian options, thanks to the tofu in the filling, which makes them a guilt-free choice for dinner.
A Family-Sized Upgrade
I was already familiar with Amy’s Roasted Poblano Enchiladas, but it wasn’t until they introduced the family-size option that I decided to try them. The smaller packages were not enough for my family without purchasing multiple boxes, which could get expensive.
With the family-size option, I can buy just one tray and pair it with a green salad for a complete meal. If we’re particularly hungry, I might serve two trays. Although it feels indulgent, we always manage to polish off every bit of the delicious sauce.
Amy’s Roasted Poblano Enchiladas are available at Walmart and Kroger and can also be purchased on Amy’s website. I make sure to grab a couple every time I’m at the grocery store.
