The Secret to Rich and Gooey Cinnamon Rolls

The trick of using heavy cream in cinnamon rolls originated from Tastes of Lizzy T’s. Julie Clark, the founder of the blog, found through extensive testing that the best way to achieve gooey perfection is to “pour heavy cream over the rolls before baking. THIS is the magic component that makes them so indulgent and moist.”

Cinnamon rolls depend on the sugar and fat in the dough for their tender texture. Adding a bit more fat in the form of heavy cream fulfills two roles:

  1. Heavy cream acts as a hydrating agent that seeps into the rolls while baking, creating steam and keeping them moist, preventing them from becoming dry.
  2. It also catches the cinnamon, sugar, and butter that might ooze out during baking, forming a decadent syrup at the bottom of the pan.

Enhancing Cinnamon Rolls with Heavy Cream

Begin by preparing your cinnamon rolls, whether from scratch or from pre-made dough. Once they’re assembled in the baking dish and have risen, warm up half a cup of heavy cream (about 3/4 tablespoon per roll) either in the microwave or on the stove until it’s warm but not hot.

Since the rolls have been proofing in a warm environment, it’s crucial that the heavy cream is not cold as it could hinder their ability to rise during baking. Avoid using heavy cream straight from the refrigerator.

Evenly drizzle the warmed cream over the rolls before baking as directed. The result? The fluffiest, most irresistible cinnamon rolls you’ll ever taste.

Is Milk a Viable Substitute?

Although possible, using milk won’t yield the same luxurious effect. Heavy or whipping cream are preferable for this method. If necessary, milk can be used, but opt for whole or another high-fat variant rather than skim milk, as the lower fat content won’t provide the same richness.

Extra Secret for Ultra-Gooey Cinnamon Rolls

For those who don’t mind a bit more effort for the ultimate treat, take inspiration from the restaurant chain KYU. They inject a mix of creamed butter and cinnamon sugar into the rolls post-baking for an exceptionally rich and flavorful experience.
