I seem to have a habit of adding garlic and butter to almost everything I cook lately. From steak and chicken bites to garlic knots, and now my latest obsession, melting potatoes—or as some call them, fondant potatoes—the garlic-butter combination is a huge hit with my family.
There’s something about the texture of fondant potatoes that sets them apart from other potato dishes I’ve tried. If you haven’t made them yet, you’re in for a treat. They’re browned to perfection on the outside and creamy, silky, and tender on the inside.
Essentially, you’re braising the potatoes. After searing them to a golden brown, they bake in the oven, soaking up all the flavors from the broth, butter, and a generous amount of garlic in my recipe.

Enhancing the Garlic Butter Taste
In traditional recipes, fondant potatoes only get a hint of garlic, usually added whole to lightly flavor the dish. If you’re someone who thinks more garlic is always better (like me), you’ll love this twist that includes six large chopped cloves mixed right in.
While some might start with oil, I opt for all butter to brown the potatoes. Managing the lower smoke point of butter can be tricky, so keep your pan on medium heat and watch closely. The deep, rich flavor and caramelized crust you get from butter are unbeatable. And don’t shy away from letting that butter brown to get a deliciously dark crust on your potatoes.
To prevent the garlic from burning, add it only after the potatoes have been seared. Temporarily removing the potatoes from the skillet gives you space to sauté the garlic, then mix in salt, pepper, and broth for a flavorful braising liquid. The potatoes are then returned to the pan, basted with the broth, and baked until perfectly tender.

These melting potatoes are the perfect side to a juicy roast chicken, a pan-seared steak, or any other comforting, savory main dish. Round out the meal with a simple side of steamed veggies like green beans or broccoli for a complete, satisfying dinner.
